My sweet tooth was aching last night! I didn’t want a true dessert, just something sweet enough to tame the crave. I decided to whip up this ridiculously easy dish (really, 5 minutes!) – this can easily be eaten as a breakfast, dessert, or add a little non-dairy milk & it’s a shake! It would also be delicious if you placed ginger snaps or raw almond cookies between the layers, too.

Ingredients (2 large servings):
- 3 ripe organic bananas
- 1 package of organic silken tofu, such as Nasoya’s Silken
- 2 Tablespoons nut butter
- optional: drizzle of dark maple syrup
Directions:
- Mash 1 banana and blend with the tofu & nut butter. Dice the remaining 2 bananas.
- In a cup, spoon your banana cream mixture and add 1 layer of bananas.
Continue to layer until you reach the top of your dish (I said it was ridiculously easy didn’t I?!). Drizzle with maple syrup, if desired.
- Enjoy eating whole!
