Pumpkin Pecan Bread with Pumpkin Cinnamon Coconut Butter

titlePhoto Oct 07, 10 07 40 AM (1)s Photo Oct 07, 10 09 01 AMsThe fall foliage is in full force up here on the mountain and I’m taking advantage of it every second I can!  It’s been a very hard week; in my last post I introduced you to my little family of furbabies. My first furbaby that I rescued & adopted passed away last week and needless to say, I’ve been heartbroken over the loss of both her and her husbunny Jack within a 2 month span.  To work through it I’ve been drowning myself in recipe testing & finalizing.  Enter my pumpkin pecan bread: this has been in the works for a year, and I was never 100% satisfied with the outcome, until now!  There’s something extremely comforting on a cool fall morning to have your house fill with the scent of pumpkins & pecans baking.  I love this bread sliced, topped with my pumpkin cinnamon coconut butter, then toasted to melt the butter into the bread! Hazelnut Coconut Pancakes: Eating whole while camping!

This past labor day weekend we stayed local and enjoyed the beauty of the Catskill Mountains in our backyard.  This meant this lucky little lady went camping!  Marley, the newly adopted rescue, went on her second camping trip and was well-behaved (yay!).  I always say, just because we’re camping, it doesn’t mean we can’t eat gourmet!  Commence hazelnut coconut pancakes 😉 .  It took me not even 5 minutes to prepare my dry mix in a container at home to bring with us for breakfast, whisk in your milk, and you have quick & delicious decadent pancakes (freshly cut fruit also is a great addition!).  Photo Aug 31, 8 10 15 AM

These muffins have a beautiful light & airy crumb!  At just 21 calories per cup, this gorgeous green squash adds depth to the bright orange-zest & cinnamon muffin.  Zucchini also packs a pretty little punch of vitamin C; 1 Cup of zucchini contains 22 milligrams (learn more here!).

Banana Butter

I not only love this recipe because of it’s simplicity, but it’s SO delicious!  I use it on waffles, pancakes, in smoothies, on hot quinoa cereal, basically anywhere you’d use nut butter!  I recommend letting the flavors meld for 30 minutes after you mix it up (makes the flavors pop more!).  Continue reading
