Chili Lime Grilled Zululand Queen Baby Pineapple

Wait, did I just hear someone say, “but it’s not grilling season?”?!  This is why I am in love with my cast iron grill pan!  Not sure where to pick one up?  Amazon can help you out with that!

Ingredients (serves 4):

Chili Lime Marinade:
  • 1/2 Cup extra virgin olive oil
  • 1/4 C fresh lime juice
  • 3 teaspoons chili powder
  • 2 cloves of garlic, minced
  • zest of 1 lime

Directions:

  1. First, let’s prepare our pineapple(s)!  Cut the top and bottom off of the pineapple so that it can stand upright.  To remove the husk, make your first cut down the side of the pineapple.  Be sure to cut away the outer skin, far enough to remove the spiky “eyes” of the pineapple without wasting much fruit!  Continue to work your way around your pineapple.  Once all of the husk is removed, cut your pineapple into 1 inch thick slices.
  2. In a medium baking dish, combine your marinade ingredients and whisk together.  Lay your sliced pineapple in your marinade and let sit at least 1 hour.  P1110284s P1110288s
  3. Fire up your grill and cook your pineapple on each side, until hot and have grill marks, about 5 minutes.P1110324s
