
Ingredients (makes 1 pizza):

Flatbread:
- 1 1/2 Cups quinoa flour
- 1 1/2 Cups water
- 2 Tablespoons extra virgin olive oil
- 1/2 Tablespoon dried rosemary (or herbs of choice)
- 1 teaspoon garlic powder
- 1/4 teaspoon salt

Crispy Baked Tofu:
- 1 14-oz extra firm tofu
- 1/2 Cup potato starch (may be substituted with cornstarch or arrowroot starch) + more as needed
- 1/2 Cup non-dairy milk
- 1/2 teaspoon salt
- Optional: 1/2 Tablespoon of rosemary (or the herbs you chose in your flatbread)
- 2 Cups organic baby greens, washed
- 1 ripe avocado, cut in half, pit removed, and sliced
- 1 batch of my Veganized Blue Cheese Dressing
Directions:
- Preheat your oven to 35o degrees Fahrenheit. If you are using a pizza stone, pop that baby in your oven to warm up in the oven while it is preheating! To make the flat bread batter, combine all ingredients in a mixing bowl and whisk to combine. You may use either a greased pizza stone OR a 9-inch greased baking pan. Pour your batter and pop it in the oven for about 20 minutes, until the top is golden.

- To prepare your crispy baked tofu bites, slice your block of tofu in equal “steaks” about 1/2 inch thick & cut each one in half or thirds (depending on the size you’d like). In a large bowl, mix your potato starch & spices. In a separate mixing bowl add your non-dairy milk. I like to have my bowls side-by-side to make this a little easier! Prepare a baking sheet by either using a piece of parchment paper OR greasing it. Time to coat our tofu! One at a time, add your tofu to the non-dairy milk and transfer to your bowl of potato starch; be sure to coat each side thoroughly & tap off any excess starch. Place on your baking sheet and repeat until all of your tofu is coated. Pop your baking tray in the oven for about 30 minutes, flipping halfway through (be sure each side is golden!).

- Time to assemble the pizza! Add your washed baby greens to your prepared flat bread crust; layer your avocado and crispy baked tofu bites. Drizzle your blue cheese dressing on top.
