Ingredients (serves 4):
- 3 medium sweet potatoes, grated (if they are organic, leave the peel on)
- 3/4 Cup water
- 1/2 Cup sweet rice flour (may sub with potato or corn starch)
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1/2 teaspoon smoked paprika
- 3 scallions, diced
- avocado oil, for frying
Directions:
- You may either grate your potatoes by hand, or use the handy-dandy grating attachment on your food processor! Once your potatoes are grated, wrap them in a cloth towel to soak up the moisture.
- In a large mixing bowl combine your flour, arrowroot starch, baking powder, sea salt, smoked paprika, and whisk to combine. Pour in your water and stir to fully incorporate. Stir in your grated potatoes and minced scallions until fully combined.
- Heat your cast iron skillet (or non-stick) with 4 Tablespoons of your oil. Once your oil is hot, drop 1/3 Cup of batter per fritter. Fry until golden on each side, about 5-7 minutes.

- I served my sweet potato fritters with homemade pear sauce on the side.
