
This is one of my favorite snacks to bring to fuel me through a hike! What, I bring brownies?! Oh yeah! Not just any brownies – flourless fueled by PROTEIN packed black beans!! The reaction when I tell people these are made from black beans is a gaping- mouthed look of pure astonishment and disbelief!
Ingredients (makes 2 dozen):
- 2 cans black beans, drained & rinsed
- 1 1/2 Cups cocoa powder
- 1 1/2 Cups coconut sugar (or raw), processed in your food processor/coffee grinder until fine)
- 6 Tablespoons avocado oil (or oil of choice)
- 4 Tablespoons milk (I used hemp)
- 4 chia or flax eggs (4 Tablespoons ground seeds whisked with 12 Tablespoons warm water, let sit for 5 minutes to thicken)
- 4 teaspoons baking powder
- 2 teaspoons vanilla extract
- 2 teaspoons sea salt
- Optional: 1/2 Cup chopped pecans / walnuts / chocolate chips to sprinkle atop
Directions:
- Preheat your oven to 350 degrees Fahrenheit. In your food processor add your beans, cocoa powder, ground sugar, milk, chia/flax mix, baking powder, vanilla extract, sea salt, and process until smooth (you’ll need to stop and scrape down the sides to ensure all ingredients are incorporated).

- Grease your muffin tins and evenly distribute your batter. Top off your brownies with nuts / chocolate chips, if using. Pop your brownies into the oven for 25-30 minutes, until the edges just start to pull away from the sides (be sure not to over bake them as they will dry out!). Let the brownies cool completely before you remove them from the pan. Store in a container in your refrigerator.
