You-Can’t-Tell-It’s Gluten Free Pastry Dough (Vegan)

I know when I had to cut out gluten from my diet, I had to find a GF replacement for all my favorite eats.  I’m sure I’m not alone!  I’ve created this fool-proof pastry dough, it’s just an extra bonus it’s gluten-free & vegan!  I’m so proud of this dough – I have to add that when my boyfriend first bit into my pastry crust, he couldn’t tell it was gluten-free.  That’s best compliment a gluten-free chef could ask for!


  • 1 ¼ Cups gf flour mix, extra for rolling
  • ½ Cup Earth Balance (or other non-dairy butter), cubed
  • 1 Tablespoon sugar
  • 1 teaspoon salt
  • 2-4 Tablespoons ice cold water
  • optional:½ teaspoon cinnamon, 1 teaspoon vanilla extract

To mix:

  1. In your food processor, pulse your flour, Earth Balance, sugar, salt (and cinnamon & vanilla extract if using) until combined (it will start to clump).
  2. Keep your processor on, and add your water, 1 Tablespoon at a time, until your dough starts to come together (be careful to not add too much water!) & forms a ball.  Cover with plastic wrap and place in fridge.

3.  Enjoy baking & eating whole!

    I can’t wait to try this. You should be really proud of yourself. Quite an accomplishment to make a GF and Vegan pastry dough.

    Would you cut down or cut out the sugar when using for a savory dish? I’m really trying to cut out sugar in my diet. Thanks!

      Great question, Phyllis! Yes if using for a savory crust cut down the sugar and can add 1-2 teaspoons of herbs as well (rosemary scented crust is delish). I’d love to know how it comes out! 🙂
