Cinnamon Spiced Vanilla Pancakes with Coconut Frothed Summer Berries


This breakfast is a healthy start to any day & it whips up in 30 short minutes! I love no-fuss breakfasts in the morning (especially during a busy week); this is why I absolutely LOVE making my simple baked pancakes.  It only takes 10 short minutes to whip up the batter (you can even make it the night before and refrigerate it to save time) and you can sing along with your normal morning routine while the pancake bakes.  In no time you’ll be indulging in a truly decadent breakfast without the hassle!

Prep: 10 minutes

Baking: 15 minutes

Total time: 30 minutes


  • Easy Morning Baked Pancake batter recipe plus:
    • 2 teaspoons ground cinnamon
    • 2 teaspoons vanilla extract
    • 1/2 teaspoon ground nutmeg
  • Coconut Froth
    • 1/2 cup CHILLED Thai coconut milk (lite is fine, full-fat will whip up nicely!) *It is best to let your coconut milk & beaters / whisk chill in your freezer before whipping it.  To keep it’s form, I also let the coconut froth rest in the freezer before serving.
    • 2 Tablespoons raw agave nectar
    • Sprinkle of cinnamon
  • Berries of choice (blackberries pictured)


  1. Preheat your oven to 425 degrees.  Whisk your ingredients together until smooth.  Pour your batter into a greased 9 x 9 baking dish.pre-baked  Bake for 12-15 minutes or until golden.baked
  2. While your pancake is baking, whip up your coconut froth using either electric beaters or a whisk.
  3. Serve your pancakes topped with berries and coconut froth. froth
    Enjoy eating whole!plated
