Lemon Ginger Zinger Glaze

This simple glaze adds a fresh twist to classic sweet breads, cakes, and cupcakes!  My Mellow Yellow Lemon Cake shines when topped with this revamped classic icing. 

Ingredients:

  • 1 Cup vegan confectionery sugar
  • 1-2 Tablespoons fresh lemon juice (+ more if needed)
  • 1 Tablespoon freshly grated ginger

Directions:

  1. In a medium-sized bowl, add your confectionery sugar, 1 Tablespoon fresh lemon juice, and your grated ginger.  Whisk together all ingredients.  Your icing should be a little dry, so slowly whisk in the additional 1 Tablespoon of lemon juice until desired consistency is reached.
  2. Enjoy eating whole!
