Cinnamon French Toast

French toast has always been my favorite breakfast classic.  You can still live a plant-based lifestyle and enjoy your french toast, too!  The silken tofu is a also a healthy alternative to the traditional egg-battered version.

Ingredients (makes about 12 pieces):

  • 1 package silken tofu, such as Nasoya Silken Tofu
  • 12 pieces of bread (I love Scharr’s Gluten-Free breads and it is delicious in this recipe!
  • 1 -2 Tablespoons raw agave nectar
  • 1 teaspoon ground cinnamon
  • Vegetable oil, for frying


  1. In your blender add your silken tofu, agave, and cinnamon and blend until smooth.  french toast batter
  2. Add 1 Tablespoon of cooking oil to your pan and heat on medium-high heat. Coat each side of your bread in your silken tofu mixture.  battered breadFry on each side for about 5 minutes, or until golden.french toast
  3. Serve with fresh berries and maple syrup, if desired.
  4. Enjoy eating whole!
