Ingredients (makes 1 dozen):
- 1 Cup non-dairy milk
- 1 Cup raw pecans, lightly toasted in your oven & roughly chopped
- 3/4 Cup sorghum flour
- 3/4 Cup potato starch (NOT flour!)
- 3 apples, diced into 1/2 inch squares
- 1/2 Cup sugar
- 2 Tablespoons ground flax meal whisked with 6 Tablespoons warm water, set aside for 5 minutes until it becomes a gooey egg-like consistency
- 2 teaspoons baking powder
- 2 teaspoons xanthan or guar gum (if you cannot tolerate gums replace with 2 teaspoons of ground chia seeds)
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground nutmeg
Directions:
- Preheat your oven to 350 degrees Fahrenheit. In a large mixing bowl combine your sorghum flour, potato starch, sugar, baking powder, gum (or ground chia seed), ground cinnamon, nutmeg, and stir to combine. Add your non-dairy milk, flax meal mixture, vanilla extract, and stir until well mixed. Toss in your diced apples and chopped pecans and stir to incorporate.

- First things first, grease those muffin tins! Fill each muffin tin to the top and pop them in the oven for 20 – 25 minutes, until golden. To ensure proper baking, insert a toothpick into the center of a muffin and if it pulls out cleanly they’re ready (just remember, the apples will be moist on the inside).
