Brownies with Pumpkin Cream Cheese Frosting

Ingredients (makes 1 dozen brownies):

  • 4 Cups GF flour mix
  • 3 Cups sugar
  • 2 Cups cocoa powder
  • 1 1/2 Tablespoon xanthan / guar gum OR ground chia seeds
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 1 1/3 Cup coconut oil, melted
  • 1 Cup non-dairy milk, room temperature
  • 1 Cup water
  • 1/2 Cup maple Syrup
  • 2 Tablespoons vanilla extract
Pumpkin Cream Cheese Frosting
  • 8 oz non-dairy cream cheese (want to make your own? check out my easy recipe here!).
  • 2 Cups confectionery sugar
  • 1/4 Cup non-dairy butter
  • 1/4 Cup non-dairy creamer
  • 2 Tablespoons pumpkin puree
  • 1/4 teaspoon salt


  1. Preheat your oven to 350 degrees Fahrenheit.  In a large mixing bowl combine  your flour, sugar, cocoa powder, xanthan gum, salt, and whisk to combine.
  2. Stir in your melted coconut oil, non-dairy milk, water, maple syrup, vanilla extract, and whisk until smooth.
  3. Grease a 9″ x 13″ brownie pan and bake for 30 minutes.  I recommend testing the center of your brownies after 25 minutes of baking (insert a toothpick into the center, if it pulls out clean they’re ready).
  4. In your stand mixer add your cream cheese, butter, and 2 Cups confectionery sugar, and mix on low-medium (I cover my mixer with a towel so I don’t powder the kitchen..or myself!).  Once combined, add in your creamer, pumpkin, and salt..  Mix until smooth and creamy.  It’s okay, I know it’s tempting – taste a bite and adjust any seasonings as necessary.
  5. Let your brownies cool completely before you add your frosting (you don’t want a melted mess…butit’ll taste the same 😉 ).  Pipe your brownies as you wish.
