Ingredients:
- 1 1/2 Cups GF Flour blend
- 1 Cup milk simmered with 2 Tablespoon Jasmine Green Tea leaves
- 3/4 Cup sugar
- 2 Tablespoons apple sauce
- 1 Tablespoon maple syrup
- 1 Tablespoon xanthan / guar gum OR ground chia seeds
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 lemon, zested
Directions:
- Preheat your oven to 350 degrees Fahrenheit. In a saucepan, bring your non-dairy milk to a boil. Once boiling, add your Jasmine Green Tea leaves and simmer for about 5 minutes (it will become aromatic).
- In a large mixing bowl combine your flour, sugar, baking powder, baking soda, xanthan gum, and stir to combine. Pour in your milk + steeped jasmine green tea mixture, apple sauce, maple syrup, vanilla extract, lemon zest, and stir until smooth.
- Add paper liners to your muffin tray and spray with non-stick spray. Fill each tin 3/4 way full (I topped my muffins with raw sugar prior to baking) and pop them in the oven for 20-25 minutes. To ensure they’re thoroughly baked insert a toothpick into the center of a muffin; if it pulls out cleanly they’re ready!

I finally got around to making these a couple of weeks ago and I just had to let you know that they came out amazing! I used the chia-seed option and knowing my oven can run a little hot, got them out a little early. They came out beautifully moist and the jasmine aroma really came through to add something out of the ordinary. I’ve been asked to make them again. =) Thanks for a great recipe.
where do you buy jasmine tea leaves?
You can either get them as loose tea leaves (natural food stores usually have them available) OR you can break open a jasmine tea bag! 🙂
