
Ingredients:
- 2 ripe bosc pears + 1 Tablespoon avocado oil
- 4 Cups of your favorite salad greens (I used baby kale & baby spinach)
- 1 Cup of my lemon avocado oil vinaigrette
- 1 clove garlic, minced
- 1 lemon, juiced
- 4 Tablespoons avocado oil
- Salt and freshly cracked pepper, to taste
- 1 Batch of my veganized Feta
- 7 oz firm tofu, pressed and cut 1/2 inch wide + 1 Tablespoon avocado oil
- Salt & pepper, to taste
- Optional: toasted walnuts (I’m allergic to most nuts so I omitted from the recipe, but walnuts and pears paired – yum!)
Directions:
- Oil your grill (or cast iron grill pan) and heat to medium-high heat. Slice your pears in half and remove the the seeds. Brush each side with avocado oil. Place cut-side down and grill until those beautiful grill marks appear.

- Brush both sides of your tofu with your avocado oil. Grill each side of your tofu until grill marks appear (about 5-7 minutes). Slice into strips.
- While your pears are grilling, add your garlic & lemon juice to a small bowl. While constantly whisking, slowly pour your avocado oil into the bowl. Add salt & pepper to taste.
- In a large bowl toss your greens in your dressing, top with your beautifully grilled pears & tofu strips, and sprinkle your feta cheese atop.
