Baked Chipotle Avocado Bites

Ingredients (serves 2):

  • 1 ripe avocado, pit removed, sliced into 1/2 – 1/4 inch thick slices
  • 1/4 Cup organic cornstarch
  • 1/4 Cup gluten-free bread crumbs
  • 2-3 teaspoons chipotle powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Directions:

  1. Preheat your oven to 450 degrees Fahrenheit & grease a baking sheet.  In a mixing bowl combine your cornstarch, bread crumbs, chipotle powder, salt, garlic powder, and whisk to combine.
  2. Bread each side of your avocado bites and dust any excess breading off.  Bake for 10 minutes, remove from the oven and gently flip over, and bake for another 1o minutes, until golden.
  3. Serve while hot!  These are delicious on sandwiches or on their own with your favorite sauce (try my ranch dressing!).
