Kiwi Pancakes

  • 3/4 Cup sorghum flour
  • 3/4 Cup potato starch (may substitute with tapioca starch)
    • PLEASE NOTE: You may make these full ‘o gluten!  Simply sub both the sorghum flour & potato starch with 1 1/2 Cups WHEAT flour and OMIT the xanthan gum!
  • 1 1/2 Cups milk (I used hemp)
  • 1 Tablespoon cane sugar
  • 1 Tablespoon xanthan gum OR ground chia seeds (OMIT if using wheat flour!)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 kiwis, peeled and sliced 1/4 inch thick

  1. In a mixing bowl combine your sorghum flour, arrowroot starch, sugar, xanthan gum, baking powder, cinnamon, nutmeg, and whisk to combine.  Whisk in your non-dairy milk and stir until smooth.IMG_4742
  2. Spoon 1/3 cup batter per pancake onto your GREASED griddle on medium-high heat, nudge into rounds (or squares, or triangles…you get the idea).  Add a kiwi slice to the center of each pancake.  IMG_4744s
  3. Cook until the top of each pancake forms bubbles & the bottom is golden.  Flip each pancake and cook until they are golden.
  4. Enjoy eating whole!IMG_4751s IMG_4773s
