Mango, Kiwi, Cucumber, Jalapeno Salsa

Ingredients:

  • 2 ripe kiwis, diced
  • 2 cucumbers, diced
  • 2 limes, juiced
  • 1 ripe mango, cubed
  • 1 jalapeno, seeds removed & diced
  • 2 Tablespoons red wine vinegar
  • Salt to taste

Directions:

  1. In a medium mixing bowl combine all ingredients and toss.  Place in your refrigerator until ready to eat (hint: the longer the salsa sits the more flavors will develop!).
  2. Enjoy eating whole!IMG_4798s IMG_4804s

Not sure what to top this on? This pairs beautifully with my Chipotle Corn Crusted Tofu and my Black Bean Pasta Dish!
