Rawesome Almond Joy Fudge

Ingredients (makes 8 pieces):

  • 1 1/4 Cups unsweetened shredded coconut
  • 1/2  Cup coconut flour
  • 1/2 Cup raw almonds, roughly chopped
  • 1/2 Cup raw chocolate, chopped
  • 1/4 Cup raw sweetener, such as coconut nectar, raw agave, or raw maple syrup)
  • 3 Tablespoons coconut water
  • 2 Tablespoons Cacao Bliss Spread
  • 2 Tablespoons raw virgin coconut oil
  • 1/2 Tablespoon raw vanilla extract (be sure it’s gluten-free)
  • 1/4 teaspoon sea salt


  1. In your food processor add 1 Cup of your shredded coconut and blend until it starts to stick together.  Add your sweetener, coconut water, Cacao Bliss Spread, coconut oil, sea salt, vanilla, and whip that up until it’s a smooth consistency.  Add in your coconut flour and mix until fully incorporated.  Move your mixture from your food processor to a large mixing bowl and toss in your 1/4 Cup shredded coconut, chopped chocolate, chopped almonds, and mix until they’re fully incorporated.
  2. Prepare a baking tray with parchment paper and grease with non-stick spray.  Press your fudge mixture into the tray until it’s about 1/2 – 3/4 inch thick.  Pop it in your fridge to firm for at least 1 hour.  Cut into equal slices (I used a circle cookie cutter) and store in you refrigerator.  I like letting the fudge come to room temperature before biting into this deliciousness!
