Raw Chocolate Chip Cookie Dough Bars

Help!  My house is addicted to these cookie dough bars!  I love using walnuts as the base for the crust for a simple play on chocolate chip walnut cookies 😉 .

Ingredients (makes 9 bars):

  • Crust:

    • 1 1/2 Cups raw walnuts or pecans
    • 1 Cup dates, pitted
    • 1/2 teaspoon salt
  • Cookie Dough:

    • 1 1/2 Cups flour (I used a mixture of 3/4 Cup almond meal, 1/4 Cup + 1/8 Cup sorghum flour, 1/4 Cup + 1/8 Cup potato starch)
    • 1/2 Cup raw chocolate, broken into chunks
    • 4 Tablespoons coconut oil, melted (fill a large bowl with HOT water, float a smaller bowl inside with your coconut oil.)
    • 4 Tablespoons raw date syrup or raw maple syrup
    • 1 teaspoon raw pure vanilla extract
    • Pinch of salt


  1. To prepare your crust, toss the ingredients in your food processor until you can pinch the mix together between your fingers and it sticks.  Lay a piece of parchment paper (be sure it drapes up and over both sides) of a 9 x 9 baking square & spray with nonstick spray.  Firmly press your crust mixture evenly into your pan & pop it in the freezer until you’re ready to add the cookie dough.IMG_1771
  2. In a mixing bowl combine all of your cookie dough ingredients and whisk until smooth.   Stir in your chocolate chunks until fully incorporated.  Pour your batter into your prepared baking tray with crust.  Pop your tray into your freezer for about 1 hour, until set.
  3. Once your bars are set remove from the freezer.  Gently lift the edges of the draped parchment paper and lift your bars out of the baking pan.  I have found a pizza cutter works great to score your pieces!  I cut mine into 3 x 3 squares (total of 9 bars).  Store them in a freezer-safe container in your freezer.
