This batch of cocoa coconut cookies was the sweet finish to a long snowed-in weekend, thanks to Winter Storm Nemo! Thankfully, we didn’t get near the amount of snow forecasted (I wasn’t too keen on the thought of being dugout by a backhoe). After the storm blew out, and I mean literally blew out with sustained 30 MPH winds, the surrounding forest was beautifully silent. I took a serene snowshoe trek to the stream and beyond, finding peace with each step in the fresh snow. 
Cocoa Coconut Squares

Directions:
- Preheat your oven to 350 degrees Fahrenheit. On a greased baking sheet, spread your cookie batter out, until it’s about 1/2 inch thick.

- Pop your baking tray in the oven & bake for about 12-15 minutes, until the top starts to golden.
- Use a pizza cutter to cut your cookie squares.
Sprinkle with confectionery sugar, if desired. - Enjoy eating whole!
