Scrumptious Chocolate Cupcake

cupcakeWho doesn’t love to bite into a perfectly moist chocolate cupcake?  These scrumptious chocolate cupcakes are not only vegan & gluten-free, but soy/nut/corn/free with NO ADDED SUGAR!  You can thank the mashed over ripe bananas for their sweet addition.  Not to mention, these are probably one of the healthiest cupcakes you could eat, thanks to the base ingredient of super quinoa!

Ingredients (makes about 14-16 cupcakes):

  • 2 Cups quinoa flakes
  • 1 Cup sorghum flour
  • 1 cup quinoa flour
  • 6 mashed over ripe bananas
  • 1/2 – 2 Cups non-dairy milk (depends on the moistness of your mashed bananas)
  • 1/3 Cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • dash of salt

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.  In a large mixing bowl, combine your dry ingredients and whisk to combine.  Add your vanilla extract, mashed bananas, 1/2 Cup of your non-dairy milk, and work out your triceps while you stir until smooth!bowl If your batter seems dry, slowly add 1/4 Cup of non-dairy milk at a time, until your batter reaches this consistency:P1070669
  2. Line your muffin tins with unbleached paper & fill your cups until they are 2/3 full.
  3. Bake for 15-20 minutes (it’s best to taste your cupcakes by inserting a toothpick in the center.  If it comes out clean, your cupcakes are ready!) and let cool before topping.cupcake
  4. Enjoy eating whole!

    These look really delicious! It’s hard for me to believe that the bananas make them sweet enough. I’ll have to try them out and see if they can tame my sweet tooth.

      With 6 super ripe browned bananas there is No need for added sugar. The carbs in the banana break down as they ripen and turn into sugar (which is why some individuals w diabetes need to watch their glucose level when eating ripe bananas!). Especially when topped with a sweet frosting (or the vegan marshmallows!!) they will certainly fix any sweet cravings!
