Spinach Quiche Nests

Ingredients (makes 1 dozen):

  • 1 batch of potato nests
  • 1 lb extra firm tofu
  • 5 oz baby spinach
  • 1/4 Cup nutritional yeast
  • 2-4 cloves of garlic (depends on how strong you’d like the garlic flavor!)
  • Salt & pepper to taste
  • Dash of Old Bay Seasoning to top finished Quiche nests

Directions:

  1. Preheat your oven to 425 degrees Fahrenheit.  In your food processor add your tofu, spinach, garlic cloves, and nutritional yeast and pulse until smooth.  Add salt & pepper to taste and pulse to incorporate.  (Hint: The longer you let your tofu mixture sit, the more flavors develop!  I let mine sit for 30 minutes while prepping my quiche nests.) nest filling
  2. Add about 1 Tablespoon of your quiche mixture to each potato nest.  Sprinkle the tops of your quiche nest with Old Bay Seasoning, if desired.prebaked quiche nestBake for 15-20 minutes.  baked quiche nest
  3. Enjoy eating whole!
