Ingredients:
- 2 Cups organic greens of choice, washed
- 1 batch of my Balsamic Grilled Tofu
- 1 batch of my strawberry balsamic glaze
- 1 Cup of my coconut bacon
- Gluten-Free buns of choice, toasted
Balsamic Grilled Tofu:
Ingredients:
- 1 14-oz package of organic tofu, sliced into 1/2 inch thick steaks
- Marinade Ingredients:
- 1/2 cup Balsamic Vinegar
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon maple syrup
2 cloves of garlic, minced
2 teaspoons dried rosemary
- 1/2 cup Balsamic Vinegar
Directions:
- In a mixing bowl combine your marinade ingredients and whisk until combined. Add your tofu steaks to an 8 x 8 baking dish and cover with your marinade. Let it rest for 1 hour, flipping half way through (if you can marinate your tofu for even longer do it! More flavors will develop.).
- Heat your cast iron grill pan to medium – high heat (or toss it on your grill!). Add your tofu steaks and grill for about 3-5 minutes on each side, until those beautiful grill marks appear! Sprinkle with salt, if desired
Strawberry Balsamic Glaze:
Ingredients:
- 2 cups fresh strawberries, washed, stems removed, and cut into quarters
- 3/4 cups balsamic vinegar
- 2 tablespoons maple syrup
- 1 clove garlic, minced
Directions:
- Combine your balsamic vinegar , maple syrup, and garlic in a small sauce pan. Bring to a boil and add your strawberries, reduce heat and simmer, uncovered, for approximately 10 minutes.
Coconut bacon:
Ingredients:
- 3 1/2 Cups organic unsweetened coconut flakes
- 2 Tablespoons Bragg’s Liquid Amino Acids (OR gluten-free Tamari)
- 1 Tablespoon dark maple syrup
- 1 – 2 Tablespoons liquid smoke
Directions:
- Preheat your oven to 325 degrees Fahrenheit. In a mixing bowl combine your Bragg’s Liquid Amino Acids (or Tamari, if using), maple syrup, liquid smoke, and whisk to combine. Add your coconut flakes and toss until they’re fully coated.
- Line a baking sheet with parchment paper and add your coated flaked coconut. Pop them in the oven for 10-15 minutes, tossing every 5 minutes, to ensure all pieces are thoroughly cooked (and not burning!).
Directions:
- Prepare your balsamic grilled tofu, balsamic glazed strawberries (see, I told it was a balsamic BLITZ!), and coconut bacon.
- Add your prepared tofu to your bottom bun, pour over your balsamic glazed strawberries, and sprinkled with the coconut bacon; add the top of your bun.
- Enjoy eating whole!
