Mouthwatering Stawberry S’mores Cupcakes that are vegan & gluten-free, healthy with no sugar?! I am extremely excited to introduce my scrumptious chocolate cupcakes: they’ve been developing for over 1 year, and I am ecstatic to say they are perfected. Topped with allergy-friendly chocolate, organic strawberries, and vegan marshmallows by Dandies, how can they be beat?!
Ingredients:
- 1 batch of my Scrumptious Chocolate Cupcake recipe
- Pint of organic strawberries, cut into halves
- 1 bag of Dandies vegan marshmallows
- 1 bag of Enjoy Life mini chocolate chips (allergy-friendly!)
Directions:
- If you have already made your cupcakes, preheat your oven to 400 degrees Fahrenheit.
- Using a double boiler, melt your chocolate. If you don’t have a double boiler, it’s a-okay! Just use a medium-sized pot and a mixing bowl large enough to rest atop. Fill your pot with about 1-2 inches of water, rest your bowl on top & add your chocolate, and bring your water to a slow boil. Be sure to stir your chocolate while it’s melting!
- Once your chocolate is melted, smooth a spoonful of chocolate on your cupcake and add 2 marshmallows.

Once they’re set, pop them in the oven until the marshmallows start to golden (about 3-5 minutes). 
- Top your cupcakes with a strawberry & drizzle the remaining chocolate.
