Vegan Mayonnaise

Vegan mayonnaise

Ingredients:

  • 1 Cup cashews, soaked overnight
  • 1/4 Cup water
  • 1 lemon, juiced
  • 2 Tablespoons extra virgin olive oil
  • 1-2 Tablespoons raw agave
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste

Directions:

  1. In your blender add all ingredients except your oil.  Blend until smooth (if your blender is having a little trouble, add 1 Tablespoon of water at a time until desired consistency is reached).   While your blender is still running, drizzle in your oil and blend until creamy.  Adjust any seasonings as necessary.
  2. Store in your refrigerator in an air-tight container for up to 1 month.
  3. Enjoy eating whole!
