Mango Kiwi Cake

  • 2 Cups sorghum OR gluten-free flour mix
  • 1/2 Cup fresh mango puree
  • 1/3 Cup apple sauce
  • 1/4 Cup corn starch *NOTE: If you cannot tolerate corn, substitute with arrowroot flour
  • 1/4 Cup vegetable shortening OR coconut oil
  • 4 Tablespoons coconut sugar
  • 3 dates + 6 Tablespoons of water, blended until smooth
  • 3 Tablespoons ground flax seeds + 6 Tablespoons of warm water, whisked & set aside for 5 minutes (until a goo-like consistency)
  • 3 Kiwis peeled, and sliced 1/4 inch thick and set aside
  • 2 mangoes, diced and set aside
  • 2 teaspoons baking powder
  • Cashew Coconut Creme
    • 1/2 Cup soaked cashews
    • 1/4 Cup Thai coconut milk fat (the top white creme)
    • 1 Tablespoon raw agave nectar


  1. Preheat your oven to 400 degrees. In a large mixing stir your flour, corn starch, sugar, and baking powder until combined.  Add in the remaining wet ingredients (mango puree, apple sauce, shortening, date puree, and flax seed mix) and stir until fully incorporated.  cake batter
  2. Pour your batter into a greased 9-inch circular cake pan.  Pop it in the oven for 35 minutes, until the top starts to golden.  To be sure your cake is baked throughout, use the oh-so-sophisticated toothpick method: insert a toothpick in the center of your cake, if it pulls out clean your cake is ready!  Remove from the oven and let cool.baked cake
  3. To prepare your Cashew Coconut Creme, combine all ingredients in your blender.  Blend until smooth.  Adjust any seasonings as necessary.cashew coconut creme
  4. Top your cake with your coconut creme , lay your kiwi slices as you like, and add your sliced mango.
  5. Enjoy eating whole!
