Chia Date Bites


Ingredients (serves 4)

  • 2 Cups gluten-free pretzels
  • 1 Cup medijool dates, pitted (about 12)
  • 1/4 Cup cocoa powder
  • 1/4 Cup coconut oil
  • 1/4 Cup chia seeds
  • + 1/4 Cup dried fruit of choice


  1. Add all of the ingredients to your food processor.  Blend for about 1 minute, until everything is combined and sticks together when pressed between your fingers.P1100639

Pour your mixture into a loaf pan and press firmly down.  Place your loaf pan upside down over a cutting board and gently tap the bottom and sides until it slips out.  Use a pizza cutter and score your brick into bites.  Store in your refrigerator for up to 1 week.P1100642 P1100653 P1100654 P1100659
