Ingredients (makes 8 4-inch patties):
- 2 x 14-oz extra firm tofu
- 2 Cups raw spinach
- 1/2 Cup nutritional yeast
- 1/4 Cup tahini
- 3 Tablespoons vegan mayo
- 2 cloves garlic
- Salt & pepper to taste
- Cooking oil for frying
Directions:
- In your food processor add your tofu and spinach and process until smooth. Add in the nutritional yeast, tahini, mayo, garlic, and process until fully incorporated. Add salt & pepper to taste and adjust seasoning as necessary.

- Add 1-2 Tablespoons of cooking oil to your skillet (I used my cast iron as it gives a great crust!) and heat on medium-high heat. Using 1/3 Cup per patty, form 1/2 inch thick and 4 inches wide and saute on each side until golden, about 5-7 minutes.
