Creamy Basil Pesto

Ingredients (serves 4):

  • 2 Cups fresh basil
  • 1/4 Cup extra virgin olive oil
  • 1 ripe avocado
  • 1/2 lemon, juiced
  • 2 cloves garlic
  • Salt & pepper to taste
  • Optional: 1/4 teaspoon dried chilli

Directions:

  1. In your blender combine your basil, extra virgin olive oil, avocado, garlic cloves, fresh lemon spritz and blend until smooth. Add salt and pepper to taste, dried chilli if using.  P1120756s
  2. Toss on your favorite pasta or over my fresh raw zucchini fettuccine!  P1120769s labeled
  3. Enjoy eating whole!
