Recipes for a mindblowing Thanksgiving

Yes, it’s Thanksliving – my family’s Holiday table spread is cruelty-free, gluten-free, and absolutely delicious.  Friends tell me how difficult it can be not only being vegan, but having food allergies during the holidays and it shouldn’t be!  That’s what motivates my food: I want everyone to be able to enjoy eating, and not just during the Holidays!  This post combines my Autumnal favorites and foods that will be gracing my table!  Enjoy eating whole!

Thanksliving Menu (V, GF)

Yes, Thanksliving – my family’s Holiday table spread is cruelty-free, gluten-free, and absolutely delicious.  Friends tell me how difficult it can be not only being vegan, but gluten-free during the holidays and it shouldn’t be!  That’s what motivates my food: I want everyone to be able to enjoy eating, and not just during the Holidays!  I’m thankful for my family.  I take for granted my family is vegan (after I made the switch), let alone my parents raised me in a vegetarian household (talk about a different upbringing that I’m most thankful for!).  I truly believe smart eating habits start at birth, and for that I want to say “Thank you” to the best supportive parents a gal could ever ask for.  Since I’ve had to remove gluten from my diet they’ve taken the journey with me, tasting my trials & errors and lifting me up when I’ve felt down.

Since Joey & I will not be spending this Holiday together, we celebrated Thanksliving #1 this past Saturday and hiked Plateau Mountain the following day (photo above!).  We packed leftovers of my Tofu Loaf & Gratifying Gravy for lunch and if possible, was even more delicious when looking out at the vista.

Scrumptious Meatless Tofu Loaf

This year will be my first gluten-free Thanksliving!  10 months ago I had to relearn my eating habits and at first I was lost & felt like I’d never be able to enjoy food again.  I wouldn’t let negativity bog me down!  I refused to eat processed, let alone mostly tasteless gluten-free options (and then I found even more foods I was intolerant of, which kept me out of public eating for good!).  My kitchen was my salvation; frustrated at the lack of healthy & delicious food options I was on a mission.  I refused to believe that healthy allergen-free food was an oxymoron and was I right!  This year I am very excited for my first gluten-free Thanksliving (it’s by far my first Vegan Thanksliving, and they’ve been cruelty-free my whole life as I was raised a vegetarian.  I will miss my brother as it’s his first Thanksliving away, but I hope with these recipes he’ll be able to feel right at home!).

This tofu loaf has the quintessential fall spices and flavors that brings back childhood memories.  And you know what?  This is delicious any time of the year!  You can even make a double batch, and freeze one before baking to use the next week (now that’s easy!).

Shepherd’s Pie with Gratifying Gravy

I ventured for my first time to Balsam Mountain in the Catskills (http://www.trimbleoutdoors.com/ViewTrip/1325324).  Boy, did the weather forecast get this one wrong!  That morning you could certainly tell Autumn had left us; as we got closer to the mountain we could see everything above 3,500 ft elevation was covered with a fresh sprinkle of snow.  As weather would have it, it started to snow as we were driving, which made us all a little hesitant about continuing on to our destination trail, but we’re troopers!

The area of McKinely Hollow was unrecognizable after Hurricane Irene destroyed the area in 2011.  In addition, there were so many downed trees on this mountain from the Hurricanes.  The entire trail head was rebuilt (more like a bushwhack until you met up with the original trail).  Only a half mile down the trail is a lean-to, an area I played in since I was a young child.

The trail was beyond peaceful, following a meandering stream in the magical forest of the mountain. As we gained elevation, we noticed more snow, until the ground was completely covered.  We were hiking into a winter wonderland and loving every second of it!  The silence the fresh snow brings to the forest is the most beautiful sound and brings such peace to my soul.  It was a steep, steady incline up the mountain (pictures don’t do it justice).  When we reached the summit, the clouds parted above us giving way to blue spots and when we reached the view, the sun peaked out to warm our faces.  The trees surrounding the view were snow-covered and made the most beautiful natural frame!

Needless to say, we certainly worked up an appetite after this full-day winter adventure!  I’ve been working on my Thanksgiving recipes, and this would certainly be a delicious addition to any table (no one would be able to tell it’s vegan and gluten-free)! Continue reading
