Cocoa Coconut Squares


This batch of cocoa coconut cookies was the sweet finish to a long snowed-in weekend, thanks to Winter Storm Nemo!  Thankfully, we didn’t get near the amount of snow forecasted (I wasn’t too keen on the thought of being dugout by a backhoe).  After the storm blew out, and I mean literally blew out with sustained 30 MPH winds, the surrounding forest was beautifully silent.  I took a serene snowshoe trek to the stream and beyond, finding peace with each step in the fresh snow.  little beaverkill in the backyard

Chewy Chocolate Coconut Cookies


These quinoa-powered cookies are perfect to satisfy those sweet-tooth cravings!  I’ve been on a tremendous chocolate-craved week and finally caved!  I even made a batch of chocolate coconut ice cream to create ice cream sandwiches (2 cans organic lite coconut milk, 1/4 cup cocoa powder, 1/4 Cup sugar, dash of salt, place in your ice cream maker until it’s creamy frozen deliciousness!).  It’s safe to say I’ve curbed my chocolate craving.

If you are able to tolerate oats, you may replace the quinoa flakes with oats.  I’d recommend using the quinoa flakes for added protein! Continue reading

Thanksliving Menu (V, GF)

Yes, Thanksliving – my family’s Holiday table spread is cruelty-free, gluten-free, and absolutely delicious.  Friends tell me how difficult it can be not only being vegan, but gluten-free during the holidays and it shouldn’t be!  That’s what motivates my food: I want everyone to be able to enjoy eating, and not just during the Holidays!  I’m thankful for my family.  I take for granted my family is vegan (after I made the switch), let alone my parents raised me in a vegetarian household (talk about a different upbringing that I’m most thankful for!).  I truly believe smart eating habits start at birth, and for that I want to say “Thank you” to the best supportive parents a gal could ever ask for.  Since I’ve had to remove gluten from my diet they’ve taken the journey with me, tasting my trials & errors and lifting me up when I’ve felt down.

Since Joey & I will not be spending this Holiday together, we celebrated Thanksliving #1 this past Saturday and hiked Plateau Mountain the following day (photo above!).  We packed leftovers of my Tofu Loaf & Gratifying Gravy for lunch and if possible, was even more delicious when looking out at the vista.

Decadent Pumpkin Spiced Cookies (Vegan & Gluten Free)

My gluten-free adventure has been full of trials & errors; I’ve since learned my body will not tolerate xantham gum nor tapioca flour.  Some baked goods came out perfectly while others, well, let’s say they make great door stoppers!  I can now yell form my rooftop “I’VE CRACKED THE GLUTEN-FREE CODE!”  These delicious, chewy pumpkin spiced cookies will certainly fill your craving for pumpkin!  Autumn is one of my favorite times of the year.  The smell of a cool crisp morning, the sound of leaves crunching below your feet, and of course, the beautiful color burst Nature gives us.   Let’s not forget, the Fall harvest bounty!
