Purple Passion Cheesecake

Purple passion cheesecake

I was contacted by Frieda’s Specialty Produce to see if I was interested in receiving their Stokes Purple Sweet Potatoes.  I am a fan of their company and love their versatile Soyrizo; paired with my love for sweet potatoes I of course accepted.

I immediately fell in love with this specialty produce!  They are non-GMO (yay), loaded with antioxidents, and not overly sweet.  If you cannot find them in your local area they’re available on Amazon! Continue reading

Simple Pumpkin Macaroni and Cashew Cheese Sauce

I’m in love with the Autumn harvest, which of course includes my true love, PUMPKIN!  Macaroni & Cheese, in my opinion, is the definition of comfort food.  I use my cashew cream sauce to make a normally-rich and heavy entree into a light, delicious & comforting meal.  How can I step-up my mac ‘n cheese?  Add a little freshly-picked pumpkin, that’s how!  I tested this dish on my parents while they were camping out here during the power outage caused by Frankenstorm Sandy.  Before you ask, “Why would you test a recipe on family that’s taking refuge?!”, my parents enjoyed the dish so much, my dad went back for thirds.  If you don’t have pumpkin, you may of course substitute with another fabulous winter squash (acorn, butternut, kabocha, your heart’s desire!).

Back to Basics Apple Pie

My parents have been camping out here in my place since it’s day #5 with no power for them, thanks to Frankenstorm Sandy! Thankfully I am up & running with power.  Last night we made a fabulous dinner consisting of quinoa crusted tofu (I’m addicted!), roasted local farm-fresh chioggia beets & purple haze carrots, beet greens, and organic rice.   For a treat, I thought I’d bake up a simple apple pie.  No thrills, nothing new, just the perfect back to basics apple pie, regardless if it’s gluten-free & vegan!

*This fabulous pie can be made with any fruit filling…peaches, pears, cherries, blueberries, strawberries…any combination your heart desires!
