Perfect Banana Quinoa Muffins

I’ve seriously cracked the gluten-free code with these muffins!  They’re made with the same recipe as my Banana Nut Butter Quinoa Bread (jump on over to see the ingredients), baked in muffin tins (either greased or in paper liners, filled almost to the top) rather than loaf pans.  I’m not one to toot my own horn, but the consistency is perfect (gluten-free or not). Pumpkin Quinoa Muffins to Warm Your Heart (V, GF)

I woke up to a cool, rainy morning here in the North East.  The beautiful fall foliage is mostly on the ground, so it looks more like a dreary November morning.  Normally it’s perfect sleeping weather, but It also happened to be one of the few mornings Joey & I have together.  I wanted to make a quick, easy breakfast that warms you from the inside out on this chilly morning.  Nothing else wakes up a house like the smell of a delicious breakfast! The farms here in the Hudson Valley have a bountiful pumpkin crop this year & if you know me, I love my pumpkin!  I cook with the seasons, so naturally I had to incorporate pumpkin with these protein muffins.  I topped these muffins with my Toasted Pecan Glaze (recipe below).

Banana Nut Butter Quinoa Bread (V, GF)

Simplicity is my best friend.  This banana bread is as simple as it gets.  Because it’s made from Quinoa (say it together, keen-wah), this bread is full of high-quality protein.  Not to mention, it’s as delicious as you can get.  Oh, did I mention it’s also vegan, gluten-free, and soy-free?

Chipotle Organic Black Bean, Yam, and Quinoa Burger (Vegan, Gluten free, Soy free, Nut free, Corn free)

I love veggie burgers!  Trying to find a vegan, gluten-free, soy-free, nut-free, corn-free, and not taste-free on the market is nearly impossible. And you know what?  Veggie burgers are SO easy to make, it’s a crime to ever buy those frozen patties!  You can make a double batch of your veggie burgers, wrap in plastic wrap, place in a freezer Ziploc bag, and voila!  You have homemade veggie burgers ready to eat at a moment’s notice!
