Hazelnut Coconut Pancakes: Eating whole while camping!

This past labor day weekend we stayed local and enjoyed the beauty of the Catskill Mountains in our backyard.  This meant this lucky little lady went camping!  Marley, the newly adopted rescue, went on her second camping trip and was well-behaved (yay!).  I always say, just because we’re camping, it doesn’t mean we can’t eat gourmet!  Commence hazelnut coconut pancakes 😉 .  It took me not even 5 minutes to prepare my dry mix in a container at home to bring with us for breakfast, whisk in your milk, and you have quick & delicious decadent pancakes (freshly cut fruit also is a great addition!).  Photo Aug 31, 8 10 15 AM

I not only love this recipe because of it’s simplicity, but it’s SO delicious!  I use it on waffles, pancakes, in smoothies, on hot quinoa cereal, basically anywhere you’d use nut butter!  I recommend letting the flavors meld for 30 minutes after you mix it up (makes the flavors pop more!).  Continue reading

This morning I was mindlessly staring at my large bowl full of ripe bananas, wondering what to make.  I played off of my Banana Nut Butter Bread recipe that I love and turned them into protein breakfast bars (okay, any-time-of-day protein bars 😉 ).  I cannot wait to take these to power myself up a hike!  Check out the nutrition facts of almond meal here & quinoa flakes here!marley beggingMarley really loved the bite she got…and obviously wants them all! Chia Seed Breakfast Bowl Two Ways

I love this nutrition-rich breakfast bowl (it also makes a great dessert!).  I used hemp milk (my personal favorite) as my non-dairy milk choice.  Check out the nutrition punch of this breakfast bowl from the hemp milk & chia seeds.

Chia seeds have 2 times the protein of any other seed or grain, 5 times the calcium of milk (PLUS boron that helps transfer calcium into your bones), 2 times the amount of potassium than bananas, 3 times the reported antioxidant strength of blueberries, 3 times more iron than spinach, and omega 3 & 6.  How do they make this pudding?  These great little seeds absorb 9-12 times their weight in water!  Want to learn more? Don’t get me wrong, I LOVE hot cereal (especially now as I can tolerate GF oats, and quinoa cereal – YUM!).  I was just getting a little tired of having hot cereal for breakfast, so what’s a gal to do?  Bake up some oatmeal bars!  These are beyond simple, moist, & scrumptious (not to mention filling!).  Plus, this recipe can be made in your food processor (easy peasy!) Simplicity is my best friend.  This banana bread is as simple as it gets.  Because it’s made from Quinoa (say it together, keen-wah), this bread is full of high-quality protein.  Not to mention, it’s as delicious as you can get.  Oh, did I mention it’s also vegan, gluten-free, and soy-free?
