Chia Seed Breakfast Bowl Two Ways

I love this nutrition-rich breakfast bowl (it also makes a great dessert!).  I used hemp milk (my personal favorite) as my non-dairy milk choice.  Check out the nutrition punch of this breakfast bowl from the hemp milk & chia seeds.

Chia seeds have 2 times the protein of any other seed or grain, 5 times the calcium of milk (PLUS boron that helps transfer calcium into your bones), 2 times the amount of potassium than bananas, 3 times the reported antioxidant strength of blueberries, 3 times more iron than spinach, and omega 3 & 6.  How do they make this pudding?  These great little seeds absorb 9-12 times their weight in water!  Want to learn more? Share the Love with Homemade Peanut Butter Cups Made with Your Own Homemade Chocolate

Growing up, peanut butter cups were my favorite chocolate / candy / dessert – no competition there!  That still hasn’t changed to this day, even with my peanut allergy!  I’ve made these with almond butter, cashew butter, and hazelnut butter (gasp! I went there!) and I can’t pinpoint my favorite 😉 .

To me nut butter is its own food group! 2 Tablespoons for a serving?  That’s unheard of; I don’t eat less than half the jar in a sitting (guilty pleasure!).  And who doesn’t get chocolate cravings?  I’m sure every gal out there will tell you, chocolate is hormone’s best friend.  Combine these two ingredients and you’ve got one happy eater!P1150670s title Continue reading

5-Minute Banana Pick Me Up

My sweet tooth was aching last night!  I didn’t want a true dessert, just something sweet enough to tame the crave.  I decided to whip up this ridiculously easy dish (really, 5 minutes!) – this can easily be eaten as a breakfast, dessert, or add a little non-dairy milk & it’s a shake!  It would also be delicious if you placed ginger snaps or raw almond cookies between the layers, too.

Chocolate Nut Butter Bars

P1050248While Frankenstorm Sandy was approaching the East Coast, I was busy cooking up a storm of my own in the kitchen preparing for the blackouts.  However, this recipe was so simple I didn’t have to cook or bake!  The only heat you need is for melting (picture the Wicked Witch standing out on Brighton Beach while Sandy is pounding the coastline…”I’m melting!  I’m melting!).  I’m sure if you’ve read my Nut Butter Cup recipe, you’re well-aware of my love for nut butter…and chocolate!  Chocolate & nut butter, two peas in a pod! I wish I could say these bars lasted, but Joey and I gobbled these bars up while hurricane winds were blowing around us.  The most difficult part of this recipe is waiting for the bars to set, but it’s so worth it!

Perfect Banana Quinoa Muffins

I’ve seriously cracked the gluten-free code with these muffins!  They’re made with the same recipe as my Banana Nut Butter Quinoa Bread (jump on over to see the ingredients), baked in muffin tins (either greased or in paper liners, filled almost to the top) rather than loaf pans.  I’m not one to toot my own horn, but the consistency is perfect (gluten-free or not). Banana Nut Butter Quinoa Bread (V, GF)

Simplicity is my best friend.  This banana bread is as simple as it gets.  Because it’s made from Quinoa (say it together, keen-wah), this bread is full of high-quality protein.  Not to mention, it’s as delicious as you can get.  Oh, did I mention it’s also vegan, gluten-free, and soy-free?
