Easy Morning Baked Pancake with Fruit Topper

Throughout my childhood, I awoke to the sweet smell of puffed-oven pancakes my mom would bake.  I was feeling nostalgic this morning and decided to convert them to be gluten-free.  When I opened the oven and saw the result, it wasn’t what I was expecting, but this was so delicious I had to share!  It takes only 25 minutes in total (about 15 minutes is waiting for it to bake), which makes it a perfect easy weekend breakfast (if you have time in the mornings during the week, more power to you!).  You can top your baked pancake with any fruit (I had apples on-hand) or jam / preserves.  As an egg replacer I used ch-ch-ch-chia seeds (yes, those same exact seeds).   I’ve put my flax seeds on the shelf and replaced them with chia seeds.  Chia seeds pack an even bigger omega-3 punch than flax seed, plus they contain antioxidants, fiber, magnesium, zinc, and copper.

Perfect Banana Quinoa Muffins

I’ve seriously cracked the gluten-free code with these muffins!  They’re made with the same recipe as my Banana Nut Butter Quinoa Bread (jump on over to see the ingredients), baked in muffin tins (either greased or in paper liners, filled almost to the top) rather than loaf pans.  I’m not one to toot my own horn, but the consistency is perfect (gluten-free or not). Avocado and Spinach Scramble

Today we’re preparing for Sandy’s arrival.  No, not a dear friend, a Frankenstorm just in time for Halloween.  Last year we were devastated by Hurricane Irene, then Halloween brought a freakish snowstorm.  Halloween ’12 is knocking down the door, and it’s not packing any treats – only tricks!  I’m keeping busy in the kitchen, trying to use up anything that can spoil in the next few days because let’s face it, we’ll be out of power!

Tofu scrambles are a delicious addition to any meal.  Wrap them up with a corn tortilla for a burrito (great as a breakfast burrito, side of home fries) or use as a tasty side dish to complete any meal (like my roasted oven fries & spaghetti squash!).

Pumpkin Quinoa Muffins to Warm Your Heart (V, GF)

I woke up to a cool, rainy morning here in the North East.  The beautiful fall foliage is mostly on the ground, so it looks more like a dreary November morning.  Normally it’s perfect sleeping weather, but It also happened to be one of the few mornings Joey & I have together.  I wanted to make a quick, easy breakfast that warms you from the inside out on this chilly morning.  Nothing else wakes up a house like the smell of a delicious breakfast! The farms here in the Hudson Valley have a bountiful pumpkin crop this year & if you know me, I love my pumpkin!  I cook with the seasons, so naturally I had to incorporate pumpkin with these protein muffins.  I topped these muffins with my Toasted Pecan Glaze (recipe below).

Banana Nut Butter Quinoa Bread (V, GF)

Simplicity is my best friend.  This banana bread is as simple as it gets.  Because it’s made from Quinoa (say it together, keen-wah), this bread is full of high-quality protein.  Not to mention, it’s as delicious as you can get.  Oh, did I mention it’s also vegan, gluten-free, and soy-free?

All Purpose Flour Mix (Gluten Free)

I won’t pull the entire rabbit out of my hat with this post, but I want to help others with an all-purpose GF flour mix that can replace wheat flour in a 1:1 ratio.  I, unfortunately cannot tolerate several legume flours, tapioca flour, and xantham gum.  I hadn’t baked, had any pizza, or flatbreads in months because 1) I couldn’t eat commercial mixes and 2) I had yet to create a mix of my own I was happy with (if it’s not perfect, I’m not eating it! I know, I’m very picky.)

Unfortunately you cannot replace 1 single GF flour in replace of wheat flour (wouldn’t that be nice & easy!).  However, all you need to do is follow this simple ratio and you can make delicious breads, pizzas, cakes, pastry dough, pancakes (anything your heart desires) that you cannot even tell are gluten-free!

The magic ratio:  70% whole grain flour(s), 30% starch flour(s). Continue reading
